The Kate Tin Range
It was while writing my cookbook, Chocolate that I realized how difficult it is to find really good baking chocolate. If you don’t have the time or inclination to temper couverture chocolate (that’s the kind with finicky cocoa butter in it) in order to make it set on your bakes, then baking chocolate is your only option.
The Kate Tin Baking Range & Shop is a collection of all the products I wish were available on supermarket shelves – the best quality, made with local ingredients and most importantly, made sustainably.
I’ve partnered with my husband, who is a chocolate-maker (convenient, right?!), to create a range of baking chocolate that is made from ethically sourced ingredients with an ingredients list that is as short as possible.
The Kate Tin range of baking chocolate uses sustainably sourced palm oil – the first baking chocolate in South Africa to do so. Along with sustainably sourced cocoa powder and local South African sugar, this range of baking chocolates not only tastes good but is good for the environment and cocoa farmers too.

Hi, my name is Katelyn Allegra – I am obsessed with baking and I sugarcoat everything. Literally! Ever heard the saying ‘You are what you eat’? Well, if that’s true, then that makes me awfully sweet. The Kate Tin is my happy place – a baking blog dedicated to recipes, desserts, treats and all things decadent and indulgent
TheKateTin.com may be your diet’s worst nightmare, but it is my sweet escape. The name comes from a silly nickname I was given by friends and family who thought it was terribly clever to twist my name – and it kind of stuck. I not only inherited the family sweet tooth but also the rare talent of finishing a tin of condensed milk in record time. My earliest memory is of baking a cake. It was a mud cake made with my sister, from the dirt of the farm that we grew up on in George, but in my mind, it was the most incredible chocolate cake ever invented and it sparked an intense love of baking. While I trained as a professional chef and spent some time in hotel and restaurant kitchens, I realised what I really loved was to inspire people to bake by creating recipes that work and images that make you drool. When I’m not eating cake, I make a living as a Professional Food Stylist, Food Journalist, Recipe Developer and Food Photographer.
